- Toss diced potatoes in olive oil and seasonings. Air fry at 400°F for 16–18 minutes, shaking halfway, until crispy and golden. Alternatively, roast at 425°F for 25–30 minutes on a sheet pan.
- Heat olive oil in a skillet over medium-low. Add diced onion and cook for 10–15 minutes, stirring occasionally, until golden and soft. Remove and set aside.
- Increase heat to medium-high. Add ground beef, break apart, and press firmly into the pan with a spatula. Cook for 5–7 minutes without stirring too much, until browned with crispy edges. Drain excess fat and season with salt and pepper.
- Whisk together mayo, ketchup, mustard, and Cajun seasoning in a small bowl. Taste and adjust to preference.
- Assemble: potatoes as the base, then beef, caramelised onions, and cheese. Cover briefly to melt the cheese. Drizzle with special sauce and finish with pickles and lettuce.
