Smash Burger Bowl

Ingredients
  

Base:
  • 3 –4 medium red potatoes diced
  • 2 tablespoons olive oil
  • Salt pepper, garlic powder, to taste
Beef:
  • 1 lb ground beef
  • Salt and pepper to taste
  • Toppings:
  • 1 medium onion diced
  • 1 tablespoon olive oil
  • 1 –1½ cups shredded Colby Jack or pepper jack cheese
Special sauce:
  • 3 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • ½ –1 tsp Cajun seasoning to taste
Optional:
  • Pickles
  • Shredded lettuce

Method
 

  1. Toss diced potatoes in olive oil and seasonings. Air fry at 400°F for 16–18 minutes, shaking halfway, until crispy and golden. Alternatively, roast at 425°F for 25–30 minutes on a sheet pan.
  2. Heat olive oil in a skillet over medium-low. Add diced onion and cook for 10–15 minutes, stirring occasionally, until golden and soft. Remove and set aside.
  3. Increase heat to medium-high. Add ground beef, break apart, and press firmly into the pan with a spatula. Cook for 5–7 minutes without stirring too much, until browned with crispy edges. Drain excess fat and season with salt and pepper.
  4. Whisk together mayo, ketchup, mustard, and Cajun seasoning in a small bowl. Taste and adjust to preference.
  5. Assemble: potatoes as the base, then beef, caramelised onions, and cheese. Cover briefly to melt the cheese. Drizzle with special sauce and finish with pickles and lettuce.

Notes

Lower carb: Swap potatoes for a lettuce base or roasted cauliflower.
Cheese melt tip: Place a lid over the skillet for 30 seconds after adding cheese for an even, thorough melt.
