Slow Cooker Mediterranean Chicken (Easy Flavorful Crockpot Dinner)

Tender chicken slowly cooks with savory olives, sweet roasted red peppers, briny capers, and bright lemon for a dish that tastes rich and vibrant without requiring much effort.

  • 6 –9 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper

  • cup sliced kalamata olives
  • 8 ounces roasted red peppers sliced
  • 2 tablespoons capers
  • ¼ cup low-sodium chicken broth
  • Lemon Herb Sauce
  • Juice of ½ lemon
  • 3 teaspoons Italian seasoning
  • 1 tablespoon minced garlic
  • Optional Garnish
  • Crumbled feta cheese

Method
 

  1. Season the chicken. Pat the chicken thighs dry using paper towels. Sprinkle both sides with salt and black pepper.
  2. Brown the chicken. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 2–3 minutes per side until lightly browned. The chicken does not need to be fully cooked at this stage.
  3. Prepare the slow cooker base. Place the sliced onion, kalamata olives, roasted red peppers, capers, and chicken broth into the slow cooker. Spread the ingredients evenly to form a flavorful base.
  4. Add the chicken. Arrange the browned chicken thighs on top of the vegetable mixture inside the slow cooker.
  5. Mix the lemon herb sauce. In a small bowl, whisk together the lemon juice, minced garlic, and Italian seasoning until well combined. Pour this mixture evenly over the chicken.
  6. Slow cook the dish. Cover the slow cooker with the lid and cook on LOW for about 4 hours, or until the chicken becomes very tender. For even cooking, you can gently turn the chicken halfway through the cooking time.
  7. Finish and serve. Once fully cooked, transfer the chicken to serving plates and spoon some of the flavorful sauce and vegetables over the top.
  8. Sprinkle with crumbled feta cheese if desired.

Storage Tips
Refrigerator:
Store leftovers in an airtight container for up to 3–4 days.
Freezer:
The cooked chicken can be frozen for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheating:
Warm gently on the stovetop or microwave until heated through.
Easy Variations
Add Artichokes
Stir in a can of drained artichoke hearts for additional Mediterranean flavor.
Make it spicy
Add crushed red pepper flakes for a little heat.
Use chicken breasts
If using breasts instead of thighs, consider cutting them into large chunks so they absorb more flavor.
