Method
- Season the chicken. Pat the chicken thighs dry using paper towels. Sprinkle both sides with salt and black pepper.
- Brown the chicken. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 2–3 minutes per side until lightly browned. The chicken does not need to be fully cooked at this stage.
- Prepare the slow cooker base. Place the sliced onion, kalamata olives, roasted red peppers, capers, and chicken broth into the slow cooker. Spread the ingredients evenly to form a flavorful base.
- Add the chicken. Arrange the browned chicken thighs on top of the vegetable mixture inside the slow cooker.
- Mix the lemon herb sauce. In a small bowl, whisk together the lemon juice, minced garlic, and Italian seasoning until well combined. Pour this mixture evenly over the chicken.
- Slow cook the dish. Cover the slow cooker with the lid and cook on LOW for about 4 hours, or until the chicken becomes very tender. For even cooking, you can gently turn the chicken halfway through the cooking time.
- Finish and serve. Once fully cooked, transfer the chicken to serving plates and spoon some of the flavorful sauce and vegetables over the top.
- Sprinkle with crumbled feta cheese if desired.
