  • ½ cup balsamic vinegar

Method
 

  1. Season the chicken. Place the chicken breasts into the slow cooker. Sprinkle evenly with Italian seasoning, salt, and black pepper to build the base flavor.
  2. Add the remaining ingredients. Scatter the minced garlic and sliced onions over the chicken. Pour in: diced tomatoes (including their juices), balsamic vinegar, chicken broth. Make sure the chicken is mostly covered by the liquid for even cooking.
  3. Slow cook until tender. Cover with the lid and cook: LOW: 6–8 hour. HIGH: 3–4 hours. The chicken is ready when it becomes very tender and easily pulls apart with a fork.
  4. Finish and serve. Serve the chicken breasts whole, or shred them directly in the slow cooker to coat them fully in the sauce. Spoon extra sauce over the top for added flavor.
