If you’ve ever found fish a little underwhelming, this recipe is about to change that. Tender, flaky cod is baked with a rich garlic herb butter and bright lemon, creating a dish that’s both fresh and comforting.

Ingredients
  

  • 4 cod fillets
  • 3 tablespoons butter softened (or olive oil for dairy-free)
  • 1 tablespoon olive oil
  • 3 –4 garlic cloves minced
  • 1 teaspoon fresh thyme or herb of choice
  • 2 tablespoons fresh parsley finely chopped
  • 1 teaspoon lemon zest
  • 1 lemon thinly sliced
  • Salt and black pepper to taste

Method
 

Preheat the Oven
  1. Set your oven to 400°F (200°C). This temperature allows the fish to cook gently while developing a light roasted flavor.
Prepare the Ingredients
  1. Finely mince the garlic and herbs. Zest the lemon before slicing it into thin rounds.
Make the Herb Butter
  1. In a small bowl, combine the butter, olive oil, garlic, thyme, parsley, and lemon zest. Mash everything together until smooth and well blended.

Prepare the Fish
  1. Pat the cod fillets dry with paper towels. This helps the topping stick better and prevents excess moisture. Place the fillets in a lightly greased baking dish and season with salt and pepper.
Add the Topping
  1. Spread the herb butter mixture evenly over each fillet. Place 1–2 lemon slices on top of each piece.
Bake
  1. Bake uncovered for 12–15 minutes, depending on thickness. The fish is done when it turns opaque and flakes easily with a fork.
Finish and Serve
  1. Sprinkle with extra parsley and serve with fresh lemon wedges. Spoon any melted herb butter from the pan over the fish for extra flavor.

Notes

Watch the cooking time: Cod cooks quickly—overbaking can dry it out.
Use fresh herbs when possible: They add brightness and depth.
Don’t skip the lemon zest: It enhances flavor without extra acidity.
Adjust for thickness: Thicker fillets may need a few extra minutes
