Ingredients
  

  • 3 –4 boneless skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic minced
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil for frying
  • 2 green onions chopped (for garnish)

Method
 

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  3. Cook chicken in batches for 5-7 minutes until golden brown and crispy; remove from skillet.
  4. In a bowl, whisk together orange juice, soy sauce, brown sugar, minced garlic, and cornstarch until smooth.
  5. Pour the sauce mixture into the skillet; return the chicken and stir to coat evenly.
  6. Simmer for about 3-5 minutes until the sauce thickens and becomes sticky.
  7. Serve hot over steamed rice or noodles; garnish with chopped green onions.

Notes

Feel free to swap out the chicken for tofu or shrimp. Add vegetables like bell peppers or broccoli for an extra crunch and nutrition boost.
