- In a bowl, whisk together the eggs, milk, salt, and pepper until smooth and slightly frothy.
- Melt butter in a skillet over medium heat, then pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are soft, fluffy, and just set. Remove from heat to avoid overcooking.
- Warm the tortillas briefly—either in a dry pan or microwave—so they’re soft and easy to roll.
- Lay a tortilla flat and place a sausage link near one edge. Add a spoonful of scrambled eggs and a generous sprinkle of cheese. Roll it up tightly, folding in the sides as you go to keep everything tucked in.
- Once all the roll-ups are assembled, return them to a lightly greased skillet. Place them seam-side down and cook for a few minutes on each side until golden and lightly crisp, and the cheese inside is melted.
- Serve warm while everything is still soft, melty, and delicious.
Notes
Keep the eggs slightly soft when cooking—they’ll continue to cook a bit more once inside the tortilla.
Warming the tortillas makes a big difference. It prevents cracking and helps you get a tight, neat roll.
If you want to add more flavor, sautéed onions, peppers, or spinach blend in beautifully with the eggs.
